Ginsui

We are situated at the entrance of Hikone Castle Town, just one-minute walk from the west exit of JR Hikone Station. Ginsui is a kappo-style restaurant, where people can watch a chef preparing dishes on the counter. See for yourself how our dexterous chef slices sashimi, and add beautifully cut raw vegetables as he garnishes the food on a plate. At Ginsui, sushi is not just rice and raw fish. Toppings of sushi are prepared by various culinary techniques: steaming, broiling, simmering, and seasoning with vinegar. If you would like to secure a counter seat, please book by telephone.
